With Super Bowl coming up I wanted to try and make pulled pork sliders. My husband loves BBQ sauce (but I don't) so I wanted to find a recipe that already had a base marinade, that I could eat as is, and add BBQ sauce for the second half of the batch. The one I found uses chicken broth with brown sugar and plenty of other herbs and spices to add flavor even without the BBQ sauce! And with the crazy week we've had (2 snow days in a row!) being able to cook it in the slow cooker was an added bonus!
We ended up just eating it as sliders, topped with a coleslaw mix I made, but this would go well with a pasta salad or even just chips! You could even use the pork to make tacos! However you choose to eat them, they are delicious!
-I split the pork into two batches. One I left as is and add some of the leftover sauce and onions. For the second batch I added Sweet Baby Ray's BBQ sauce
- The recipe calls for 2 cups of BBQ sauce but I added a little at a time until it was covered but not overly saucy.
Coleslaw
- I used a pre-packaged coleslaw mix and added lemon juice, mayonnaise, salt and pepper. Add a little bit at a time until you are happy with the flavor. I don't like it to be too creamy so I only added a few squirts of mayonnaise.
The recipe has you remove the pork and strain the onions out separately. I added the onions in the batch I made using the sauce from the slow cooker. I didn't add any onions to the BBQ batch. I also ended up separating all the ingredients into different bowls to make it more of a "Make your own slider" meal so everyone could add as much/as little sauce as they wanted.
