I jumped on the baked feta pasta trend...and I am glad I did!

My friend sent me a video of a baked feta pasta recipe that has been all over social media and once I saw how simple it was to make I knew I had to try it! If you haven't seen it yet, this recipe is extremely easy and so delicious! There are a few variations but I chose the recipe below because it added a few extra herbs and spices. The red pepper flakes definitely gave it a kick so if you are like me (the slightest hint of spice, even if mild, is too spicy for me) I recommend just using half the amount or leave it out altogether.

- If you don't like any hint of spiciness, lower the amount of red pepper flakes.

-I used a little over 1/2 of a 16 oz box of Rigatoni pasta. The more pasta you add the less creamy the sauce will be. I recommend using no more more than 3/4 of the box so it doesn't dry out.

-I used fresh basil to garnish but parsley works just as well

This was pre-baked. I added extra olive oil on top of the feta and if you want, you can add more of the herbs on top of the cheese too.

It looked and smelled so good even before I mixed everything together! You will see A LOT of oil but don't worry it all blends with the cheese once you start mixing and adding the pasta.

And here is the final dish! You can add fresh basil or parsley. Dried herbs are fine too!

Enjoy!
