I have been very busy with my new business the past few days so I barely had time to cook! We started to get back into our old habit of ordering in every day, which I am okay with every so often but the whole reason I started cooking was so we could stop doing it daily!
We ended up not having any defrosted proteins so I looked up basic pasta recipes. If you have read my other posts, you know I love anything with citrus flavors so when I found a brown butter, lemon pasta dish that had only 5 ingredients I decided to go for it!
It's was so simple and full of flavor, especially from the lemon! Plus, the parmesan cheese gave it the perfect creamy consistency. If you don't want the lemon to overpower the dish, I recommend using half and maybe adding more parmesan cheese.
You could also add chicken to the recipe if you want to have a protein but the pasta alone was very filling!
- I used the full lemon but if you don't want lemon to overpower the dish, use half
- If you add more parmesan and the sauce starts to dry out, add more pasta water (about 1 tbsp. at a time)
If it starts to dry out after you add the cheese, add a little more pasta water.
