Summer is for grilling... and refreshing side salads/toppings!

Now that it’s getting warmer out my husband has been grilling more. I am still not confident in using the barbecue but I can definitely help with marinades and the sides!


One of my favorite ingredients to use in summer side salads is avocado. I used to not even want to go near an avocado but then a friend convinced me to try guacamole and since then I‘ve been hooked. Maybe it was the lime taste that helped (I love anything citrus) but now I will add avocado any chance I get. Even if it’s by itself in a salad or as a spread!


Anyways, back to this recipe... I found a recipe for an avocado corn salad that looked so refreshing and delicious! The only problem was I didn’t have one of the ingredients, cucumber, but decided to try and make it with what I had. I’m so glad I did! It was still full of flavor and went perfectly with grilled chicken. You can pair it with about anything or even just have the avocado corn salad by itself! I ended up having a little extra leftover and ate it with tortilla chips.

I also made a simple mixed green salad with a lemon garlic dressing I came up with on my own (well, not fully on my own.. I was inspired by other lime marinades/dressings I've used in the past).


Overall, it was the perfect meal for an "almost summer" day! We will definitely be adding this side salad to our future BBQ dishes!


- I didn't use cucumbers and just added a little extra corn

- I ended up eyeballing the amount of lemon juice I used and just kept tasting after I added a little at a time


Lemon garlic dressing

2 tbsp olive oil

1 tbsp lemon juice

1 tsp minced garlic

pepper (to taste)


Mix all of the ingredients above and pour over salad.


ENJOY!
