Now that it's getting nicer out, my husband was itching to be the "house chef" again and use his barbecue so for this meal he pretty much ran the whole show but I wanted to contribute something!
Usually when he grills, I make a side pasta salad but since we were eating flank steak, I wanted to try a vegetable side. This parmesan roasted broccoli dish is so delicious and easy to make!
And if you are good with a grill, my husband made these amazing balsamic grilled vegetables. He just seasoned veggies with salt, pepper and drizzled a little bit of olive oil and balsamic vinegar then grilled them in a barbecue safe pan (see picture below). He used red onion, red & yellow peppers, asparagus and zucchini but you can pretty much use any vegetables!
- I only cooked it for 20 minutes total (I flipped it halfway)
- I added extra parmesan for the last 10 minutes
I added extra parmesan for the last 10 minutes but even the burnt parmesan (on the bottom of the pan) was still tasty!
These are the grilled veggies my husband made. Totally worth buying a grill pan for these. They were so delicious!
