Zoodles so good you'll forget it's not pasta!

I have been wanting to try to make zucchini noodles, a.k.a. zoodles, but every time I find a recipe I end up going with regular pasta. 😜


This lemon garlic steak and zoodles recipe looked so delicious though and uses lemon, one of my favorite ingredients! I couldn't find pre-spiraled zucchini/squash at the supermarket, and I don't own a spiralizer, so I ended up using a peeler to make pappardelle-shaped noodles. You can also use a grater but the pieces will be shorter and thinner.


As for the steak, I ended up cutting them into cubes instead of strips because I didn't want them too thin in case I overcooked them! I am glad I did, I definitely would have overcooked the steak when I added it back in at the end.


It came out so delicious! The lemon flavor is very prominent though, which I LOVE, so if you don't want it to be too "citrusy" cut the amount of lemon juice in half. I also used less Sriracha sauce because some of the comments said it was very spicy and I can't handle even the slightest hint of spiciness!


However you choose to make it, make sure to make it your own! That's a lesson I continue to learn the more I cook. You don't have to follow a recipe EXACTLY as it's written. That's what makes cooking so great! You find the ingredients you like less/more and customize it to your taste!


- For the marinade, I only used 1 tsp of Sriracha sauce to make it less spicy

- I didn't have fresh parsley so I used the dried version instead

I cut the squash in half then peeled it from the inside so more of the pieces has the skin on it


They looked so pretty I had to share!


At the end, you add the beef back in to mix all the flavors together. I definitely had more sauce than I thought but you can spoon it out before serving.
