I am trying to stay on top of cooking more than ordering in but it's starting to get hard again! So when my husband found this Asian chicken rice bowl recipe that required very minimal cooking, I knew it was a perfect go-to meal for a super busy day!
The recipe uses rotisserie chicken, which we ALWAYS have in my house. My kids LOVE rotisserie chicken over grilled chicken so I always buy a whole chicken at BJ's or the supermarket (BJ's is definitely much bigger and juicer!)
- I didn't have a fresh ginger root so I used ground ginger
-I used plain sesame seeds instead of toasted
- I used instant brown rice
- I only used 3 cups of coleslaw to avoid it tasting too dry (some of the comments in the original recipe mentioned it being too dry and needing more dressing)
Overall, this was a great meal! It was super quick, healthy, and tasted great!
This was before adding the sauce. I also used a different cole slow that had broccoli to add more crunch.
I added extra sesame seeds to the top as a garnish.
