It's been awhile since I used the slow cooker and with the kids after school sports activities back in session, it's been super busy, so I needed something I could just leave to cook on it's own! I prepped everything in the afternoon, while the kids were in school, then after 4 hours dinner was ready! That's what's so great about the slow cooker, even if you don't have time in the afternoon, you can also prep first thing in the morning and just let it cook on low heat for longer.
I usually have to figure out sides for most of my slow cooker recipes but this recipe included potatoes, onions, corn and carrots so our whole meal was set! Plus, it is cooked in a delicious lemon herb sauce so it gives the overall dish a great flavor! If you prefer less sauce, like my husband, you can just drain the potatoes and veggies with a slotted spoon when transferring it onto a serving plate. Either way, it's simple to make and a hearty meal so you won't go hungry!
-I used baby carrots and cut them in half but would recommend keeping them whole
- I broiled the chicken thighs for about 5 minutes before serving
When browning the chicken, before it goes in the slow cooker, make sure to have enough olive oil so the skin doesn't stick to the bottom of the pan.
This is before I turned on the slow cooker. I poured the sauce mix on top of the potatoes and vegetables and then put the chicken on top but you can also pour the sauce last so it's all over everything.
The final dish! I added parsley as a garnish
