My husband loves to order in Chinese food but I'm not the biggest fan (I know, crazy right!?) so whenever we do order it, we go all out to satisfy his craving. Spare ribs, Lo Mein, Chicken & Broccoli, Fried Rice...I can keep going!
It's not that I don't like Chinese (clearly not, as you can see we get a lot when we order! lol) but it's just not my first choice. So when I found this beef & broccoli recipe, he was surprised I even suggested it! I wanted to try something new with beef, and I had frozen broccoli, so when I did a search, this was one of the first recipes that came up. Plus, it was another slow cooker recipe, which I am the most comfortable with!
The recipe says to cook on LOW to keep the beef tender but I mistakenly put the slow cooker on HIGH and didn't realize it until an hour and a half into the cooking time! I was nervous the meat would be chewy but after cooking it another 1.5 hours on LOW it was still tender and tasty! Try not to make the same mistake I did but if you do, it's okay! Just switch to LOW and cook it for a little less time. The meat was actually already fully cooked after the 1.5 hours but keeping it in longer helps the flavors soak into the steak.
Here is the recipe with a few suggested changes:
- I used a little more cornstarch to thicken the sauce
-I would add about another 1/2 cup of broccoli. There wasn't enough broccoli when we had seconds
