Unbirthday celebration? Any excuse for these delicious cookies!

Lately my daughter has been all about being my sous chef, especially when it comes to baking!

I recently saw a video from Tasty for Cake Mix cookies that looked so delicious! They had 9 different types you could try, from the classic chocolate chip cookie to Strawberries n' Cream! I really wanted to try the S'mores version but my sous chef wanted to make the birthday cake mix cookies to celebrate a pretend birthday. She is into having pretend birthday celebrations and makes us all sing happy birthday to the "birthday person" (including to her dolls 🤣) .


So birthday cake mix cookies it was! We decided to have some fun with it and make it an "Unbirthday" celebration for all of us! For those of you who are Disney fans, I got this idea from Alice in Wonderland. The Mad Hatter tea party scene is one of my favorites! When I told my daughter about the idea of celebrating everyday, she loved it! We will have to add Alice in Wonderland to our family movie night list but for now, they love the idea of celebrating their "Unbirthday". I'm going to have to find more dessert recipes for our celebrations! 🤪


As the Mad Hatter says, "A very merry unbirthday to you!"


-We used Betty Crocker Party Rainbow Chip cake mix

-The recipe says to use an ice cream scooper but if you want regular size cookies, use a tablespoon instead

-If you are adding sprinkles on top, add them before you bake the cookies so they stick on better

Any birthday cake mix works. We used Rainbow Chip but Funfetti is another good choice! You can also use the small circle rainbow sprinkles as a topper. We used both regular sprinkles and the small circles.

This is the pre-baked cookies so you can see the size when using a tablespoon instead of ice cream scooper.
