I have been so busy with my new business, Fab Treats, that I haven't had time to cook or even bake (aside from baking for Fab Treats)! Luckily, my husband has stepped back in as our "house chef" and we have been grilling ALOT! And for dessert, my kids have been eating any leftover treats I make! 🤣
Even though they love to eat my treats, I wanted to try something new! We've been eyeing this great ice cream cupcake recipe from Cookies & Cups and since it was our 12th wedding anniversary I decided to try it with the kids but make it into a cake!
This recipe is super easy and a perfect way to get the kids involved! My kids LOVED helping out, especially with crushing the Oreos! The best part is, you can make this with any ice cream and even change the crust flavor! We definitely loved making it into a cake but will have to try the cupcake version next time!
Either way, this was the perfect way to celebrate our anniversary and the end of the summer!
- Since we use a 9 inch round cake pan, we ended up crushing 18 Oreos (vs. 12) and added 1 tbsp. of melted butter
- Make sure to be gentle when spreading the ice cream so the bottom Oreo crust doesn't come off.
The Oreo crust dried out a little because we took too long to spread it. Make sure you have enough butter mixed in to keep it intact.
We went light on the chocolate syrup but you can add as much, or as little, as you want
