Boozy Truffles

I have been eyeing this truffle recipe for awhile but was too nervous I wouldn't be able to get the chocolate just right enough to roll them up. A friend of mine posted a picture of truffles she made and it encouraged me to give it a try!


This recipe seemed the simplest and also had an option to add alcohol which was perfect for our mini New Year's Eve celebration!


I made half the batch without alcohol for my kids and the other half with birthday cake vodka (it was the only flavor liquor I had when I made these!) You can use any type of alcohol but I recommend Kahlua, or any liquor with espresso, or champagne.


I ended up making a second batch this morning and used champagne for that one but I didn't allow enough time for it to harden. If you use alcohol, I recommend keeping the mixture in the refrigerator longer, even overnight, as it makes it easier to shape.


Here is the recipe with a few of my suggestions:

-If you add liquor, add a little at a time. Since I used a little less than half the batch I only added 1 tbsp. of cake vodka but it ended up not hardening as much so I had to remelt the truffle mixture and add about 1/3 cup more of chocolate. I also kept it in the fridge overnight and let it sit out about 30 minutes the next day before shaping.


-In my second batch from this morning, I added 1/2 tbsp. of champagne at a time then after mixing it in, I added a little more of the melted chocolate until it didn't look "watery" (see image below).


-When rolling into truffle balls it's better to use gloves. If you don't use gloves, the truffle mixture starts to slightly melt from your body heat. I used gloves for my second batch and it made it easier to roll into a ball. And your hands won't get as dirty!


-If you are using melted chocolate to cover the truffle, use a fork to hold the truffle and a spoon to put the chocolate on top.



This is to show how the truffle mixture should look like after adding alcohol (Also, the pot I used was not over heat, it should be warm, closer to room temperature, when mixing in alcohol).


This is what the truffle mixture should look like before you start rolling them into balls. It will seem a little hard on top but you should be able to easily put a spoon through it.


This is the non-alcoholic batch.


This is the cake vodka batch.

This is the champagne batch. You can see from the middle one the mixture was too soft when I rolled them. I recommend keeping the truffle mixture in the refrigerator overnight then letting it sit out for about 30minutes before rolling.
