What better way to enjoy the cold weather than with Butternut Squash soup. This is one of my favorite soups! I've had a few versions (my brother-in-law's is so far one of my favorites!) but they all have so many steps and I needed to find the easiest recipe I couldn't screw it up! This is another slow cooker recipe (I use the slow cooker almost every time I try to cook!)
Here is the recipe and a few of the changes I made:
- The recipe calls for fresh thyme and sage. I couldn't find fresh sage so I used a dried version and also added an extra sprig of thyme. I also added a little extra cayenne to give it more flavor.
- I only used a small pour of heavy cream when I served the soup. My husband preferred it without the cream.
- I also didn't have fresh parsley so I garnished the soup with dried parsley and fresh ground pepper.
EXTRA TIP TO THICKEN SOUP: My husband wanted the soup to be a little thicker so he mixed a spoonful of flour and room temperature butter (equal parts of each ingredient) then added the mixture to his bowl of soup.
