Growing up, when it was snowing, or a super cold day, my dad would make us chicken soup. This wasn't your typical chicken with noodles type of soup but a heartier kind with potatoes, corn, rice and chicken on the bone. It was always 100% homemade, down to even making his own chicken broth!
I always crave his soup on a cold day but there are too many steps for me to try and make it taste exactly the same, until now....
I wasn't even looking for an "easy" version of my dad's soup. I just happened to google chicken and potato slow cooker dishes (I had leftover potato) and stumbled upon this chicken stew recipe.
When we tried it, even my husband noticed how similar it was to my dad's soup! I finally found something that tastes almost as good as my dad's soup, but in less time AND in the slow cooker (Sorry, nothing can beat my dad's chicken soup but this was close!)

- The only change I would make (I ended up doing this when I heated the stew up for leftovers) is add rice and corn to make it closer to my dad's version. If you decide to do this, you can add the corn at the beginning before starting the slow cooker. I recommend cooking the rice separately and adding before serving.
Had to share because it looked so pretty before adding the chicken and broth!
After shredding the chicken, add it back to the slow cooker for a few minutes before serving.
