Chicken Tortilla soup...prep it in the morning, ready by dinner time!

This was one of the first slow cooker recipes I tried on my own. There is barely any prep and it's so easy to make! If you are a beginner cook, the slow cooker is a great purchase for your kitchen. It's almost impossible to mess up a slow cooker recipe and it's also very convenient. You can prep it first thing in the morning and have one less thing to worry about once everyone is home! In my house, cooking dinner in the evening is almost impossible with the kids running around and me trying to convince my son to do his homework! So the easier the recipe, the better!

-I left out the jalepeño because it's too spicy for me but the soup still has a lot of flavor without it

- I also don't like beans (my husband hates that I don't add them!) If you are picky like me, you can always cook them on the side and let others add them separately.

NOTE: Since I do not include beans I add rice before serving to make the soup heartier. If you do this, add a little extra chicken broth (approx. 1/2 cup) since the rice will absorb the broth.

- For the tortilla strips, I just use packaged multi-color strips instead of making my own. It's one less thing to have to worry about cooking and I also like to have them around to use in salads.


I added an extra 1/2 cup of broth since I add rice once it's done. You can add the broth even if you don't use rice if you want more liquid than chicken (2 chicken breasts makes a lot of shredded chicken!)
