I had leftover vegetables I wanted to use before they went bad so my first thought was a chicken stir fry but since it's cooked on the stove top, as usual, I was too nervous to try! My husband convinced me I could do it, especially since the chicken was in smaller cubes so there was less of a chance of it cooking unevenly!
My biggest problem with the stove top is I overcook a whole chicken breast because I get nervous that the thicker side will be raw. Since I had to cut the chicken into smaller cubes (before cooking), I felt more comfortable knowing the chicken was fully cooked. This recipe also has you boil the chicken & vegetables in the sauce, at the end, allowing it to cook through without burning!
So all in all, I actually successfully cooked chicken breast! I'm slowly working my way up to a whole piece but for now, this recipe will be added to my list of dishes I can make!
If anyone has any tips on how I can avoid overcooking chicken send them my way!
- If you feel the vegetables need more time to get tender, add a little water and keep mixing them. I ended up adding some water halfway through sautéing.
-The recipe uses cornstarch to thicken the sauce but I used flour instead
-The great thing about this recipe is you can use any vegetables! I used broccoli, red pepper, onion and shredded carrots.
This was halfway through cooking the vegetables. Once I added some water it helped make the veggies more tender.
Cooking the chicken in the sauce helped avoid overcooking it!
Make sure to thoroughly mix the chicken and vegetables when you add them altogether with the leftover sauce.
The final dish! I decided to get fancy and used a small ramekin to shape the rice before plating =)
