Chocolate Chip Banana Bread...Dessert or Breakfast?

Both of my kids like to eat mini blueberry muffins for breakfast (they eat the BJ's brand) so a few months ago I decided to try and make them myself. It was not a success! They didn't like that they could taste the actual blueberry, which is odd because they both love to eat fresh blueberries! 🤦🏻‍♀️


I gave up on the blueberry version and discovered they love banana bread in a mini muffin form! We've made banana bread a few times as a treat for my dad (it's his favorite dessert) so I decided to try to make them as mini muffins, with chocolate chips, and they were a hit!


There are a few great recipes but the one I am sharing is the easiest and quickest. Most of the ones I've tried have you mix the wet and dry ingredients separately but this one you can do it all in one bowl. You can make this recipe without the chocolate chips too (my dad doesn't like chocolate -- who doesn't like chocolate?!)


So whether you decide to make this as a loaf or as muffins, they are super tasty and breakfast approved (at least in my house!)


- I add 1 tsp of cinnamon in the mixture

- You can use regular chocolate chips if you don't have mini chips

- When using chocolate chips, I like to top the bread, and muffins, with a few mini chocolate chips

- Since we make it for my dad, I use half the batter for the loaf pan then the 2nd half for the mini muffins (it makes approx. 16 mini muffins).

Note: If you split the batter, you only need about 1/4 cup of chocolate chips

-If you decide to make the mini muffin version you only need to bake them for approximately 15-20minutes.


If you use the full batter for the mini muffins it will yield approx. 30

This is with just using half the batter for the loaf. If you use the full batter it will rise slightly above the pan.
