Sausage and the crispiest potatoes you can't get enough of!

Anytime I go to BJ's I try to buy protein in bulk so we always have something in the freezer to take out for the next day. Over the summer, since we (aka my husband) mainly used the BBQ for meals we started buying Premio sausage in bulk too. On my recent BJ's trip, by force of habit, I bought the sausage again! My husband is totally okay BBQ'ing even in the winter but I realized, why couldn't we put them in the oven too? So I decided to give it a shot. It was super easy and the sausages were so delicious!


Now about my side dish... for the past few weeks I keep seeing Facebook videos about smashed potatoes. I had about half a bag of small red potatoes and was going to make my usual roasted potatoes but it was like Facebook was telling me "You've got to try these, NOW!" I am so glad I did!


I am now a HUGE fan of these potatoes. The combination of a soft & fluffy inside with a crispy exterior made them taste like french fries but so much more flavor and without all the grease! I will definitely be making these again!


Now for the recipe...

Sausage

1 pack of sausage (I use Premio Sweet sausage but any brand or flavor is fine)


1) Preheat the oven to 400 F. (Better if you use the convection oven)

2) Cook the sausage on a pan for approx. 30- 40 minutes. Turn the sausages over half way through.


Side dish: Smashed potatoes

Below is the link to the recipe I used and a few changes I made:


- I didn't have garlic salt so I used a mix of salt, dried parsley and garlic powder

- I substituted the cheese with grated parmesan which was still good but shredded would have definitely made it cheesier

- I added extra salt before serving

I also made oven roasted brussels sprouts in the same pan as the potatoes. Just toss in a bowl with olive oil, salt & pepper then cook in the pan with the potatoes. Make sure to flip them the same time you flip the potatoes.

You can use any round glass cup to smash the potatoes. This part is fun but don't get too excited, you don't want to completely breakthrough the potato!
