Caprese salad has always been one of my favorite appetizers. It's so fresh yet filling! I've added it to grilled chicken but recently found this recipe that takes it a step further and uses an Italian seasoning marinade for the chicken.
It is definitely worth marinating! The Italian seasoning with the fresh mozzarella and basil makes the perfect combination of flavors! I also used a balsamic glaze to top it off. You can use vinegar but the glaze has a sweeter taste.
Either way, this Caprese chicken is great on it's own or you can add a side of pasta too! I made rigatoni, mixed it with minced garlic and a little bit of olive oil, then topped it with basil.
Here is the recipe with a few of my suggestions:
- I like to use a ziploc bag when marinating so you can make sure both sides are fully submerged in the marinade.
- The chicken breasts I had were very thick so I used a meat tenderizer to thin them out. You can also cut them in half.
