Ending the week with Fajita Friday!

I finally decided to make chicken and veggies on one sheet pan! I even went as far as using chicken breast. If you have read my other posts, I tend to overcook chicken breasts, and they can definitely get tougher than chicken thighs if you cook them too long. So cooking chicken breasts on the same pan as veggies was a little intimidating for me but this chicken fajita recipe looked so delicious and quick to make! And for a Friday, the quicker the better so we can get our weekend started!


Luckily, the chicken breasts are cut into thin strips so I felt more comfortable about not overcooking them AND I was able to cut a small piece off to check, without making it look to obvious. 😉


Plus, the great thing about this recipe is you can have any sides/toppings you want or just eat it as is in a tortilla! I decided to make a fresh tomato salsa, guacamole and try a pre-made Mexican Style roasted corn from Trader Joe's. The roasted corn was a nice touch! Trader Joe's always has good side dishes if you need a last minute idea!


Below is the recipe along with my salsa and guacamole recipes:


- I used McCormick's Fajita seasoning instead. I also used about 3/4 instead of 1/2 but I recommend using the full bag.

- I used yellow and red peppers but you can use any color peppers


SALSA

1 cup cherry tomatoes (cut in quarters)

1/2 red onion (chopped)

Approx. 1/2 cup of cilantro (chopped)

1 lime (juice)

salt & pepper (to taste)


Mix tomatoes and red onion together with cilantro. I used less onion than tomato because my husband isn't a fan of onion but you can always add more. Same goes for the cilantro. I start off with 1/2 cup but as I mix it, I sometimes add a little more.


Once mixed, add lime juice and salt and pepper to taste.


GUACAMOLE

1 avocado

2 tsp. minced garlic

1/2 lime (juice)

Approx. 1/4 red onion (chopped)

Approx. 1/2 cup of grape tomatoes (cut in quarters)

Approx. 1/4 cup of cilantro (chopped)

salt & pepper (to taste)


- Place garlic and onions in bowl and use a fork to smash them (this allows the flavors to come out more)

-Add avocado and lime juice then continue to smash until smooth

- Add tomatoes and cilantro and mix

-Add salt and peppers to taste


The measurements above are starting points but feel free to add less/more depending on your preference. I usually add more cilantro and sometimes less onions since my husband doesn't like onions as much.



This was right out of the oven. You can't even tell I cut a small piece off of one of the chicken strips to make sure it was cooked! 😉

I highly recommend the roasted corn from Trader Joe's!
