I've been so busy this week I had to go back to my slow cooker! I wanted to try and find something a little "healthier" (since Super Bowl and Valentine's Day are coming up) and came across this Greek chicken recipe.
For all you Greek lovers out there this recipe is so delicious! Even though it's a slow cooker recipe, you can definitely use the same marinade to make chicken souvlaki on the stove top or in the oven.
And the possibilities on how to serve it are endless! I only shredded half the chicken and served it with couscous and a cucumber salad but you can also put it in a pita or use the unshredded chicken in a greek salad. If you don't shred the chicken, let it cool down before removing it from the slow cooker so it doesn't fall apart.
As for the cucumber salad, I highly recommend it as a side dish if you decide to shred the chicken. It gives the overall dish a nice crunch and you can't go wrong with feta!
-I added 1 tbsp. of paprika to give the chicken extra flavor
Greek Cucumber Salad
-1 roma tomato (cubed)
- 1/2 red onion (chopped)
- 1/2 cucumber (cubed)
-Approx. 1/2 cup of feta -1/2 lemon
- Approx. 2 sprigs of dill (chopped)
- Approx. 1 tbsp. olive oil
-salt & pepper (to taste)
Mix all the dry ingredients together then add lime juice and olive oil (add a little at a time). Add salt and pepper to taste.
