Monday's are pretty hectic in our house, and I haven't done our grocery shopping yet, so cooking is the last thing on my mind! I used to just order in (actually, I did that almost everyday before I cooked 🤦🏻♀️) but having a home cooked meal for dinner helps get our families week started right. I also don't cook EVERY day so breaking it up to every other day helps with having leftovers throughout the week.
Sometimes I cook meals in advance on Sunday but when I don't (like today), finding a recipe that uses staple ingredients I already have in the pantry makes it much less stressful. Plus, it's one less thing to have to figure out when I am running around trying to get the kids ready for school and making a mental list of what needs to get done for the week!
This Honey Garlic chicken recipe is great for whatever hectic day(s) you have during the week and you can always add more chicken thighs if you want leftovers!
Here is the recipe and a few of the changes I made:
-I ran out of dried basil so I used oregano (you can also use tarragon, thyme or savory)
-You can also used jarred minced garlic if you don't have fresh garlic
-I used 4 chicken thighs (as suggested by the original recipe) but there is plenty of sauce if you prefer to add more
- I sautéed peppers with some of the extra sauce. You can do this with any vegetables. I am going to steam broccoli next time then mix it with the sauce.
-I like to serve it with white rice and add some sauce once served.
When it's done, it doesn't look so appetizing in the slow cooker but this is to show you how much sauce you will have to use on whatever side dish you pick. If you prefer to cook the vegetables in the slow cooker, you can add them for the last 30 minutes of the cooking cycle.
