I was going to make the lemon pepper chicken I posted about a few weeks ago but came across another lemon chicken recipe that included broccoli and made the lemon sauce slightly different. This recipe has you use lemon wedges mixed with water and lemon juice where the other recipe I've made uses chicken broth and butter. Both are equally as tasty but for obvious reasons, this recipe is definitely a healthier alternative.
Since I am a lemon-lover I added lemon zest to the chicken before cooking it and I also added some lemon juice to the broccoli. If you don't want an overly citrus taste though don't add the extra lemon juice to the broccoli. I liked it but my husband thought it was "too lemony."
One "watch out" though is if you are searing the chicken in batches definitely use more olive oil per batch or it will stick to the pan. I also added a little bit of water for my second batch towards the end as the oil burns off quickly.
- I added lemon zest on top of the chicken before searing
- I added a little bit of lemon juice onto the broccoli before putting it in the oven

You will have leftover browning from the chicken but once you add the lemon juice and water to the pan it will easily come off and mix in with the sauce.
I added lemon juice to the broccoli before cooking. This is right before I put it back in the oven with the chicken.
